Chip Cheat: Roasted Chickpea Recipe

This is my way to cheat for a healthy salty snack instead of just grabbing potato chips.
grab some Chickpeas they are high in protein, minerals, vitamins and Fibre.

so chickpeas are a great for you and using this recipe they taste great too!

 Ingredients 

  • Chickpeas- dried (1 day prep time) or canned (3hrs prep time)
  • Good oil with a high smoke point like rice bran, peanut or saff flower oil – Why does a smoke point matter read it here at serious eats http://www.seriouseats.com/2014/05/cooking-fats-101-whats-a-smoke-point-and-why-does-it-matter.html
  • Onion
  • Garlic
  • Spices- Salt, pepper, stock powder (veg), onion powder (not onion salt), chilli (optional)

Technique 

Wash chickpeas with warm water. Soak in warm salted water for 2hrs if canned overnight if dried. (this will reduce gastric upsets). Strain and partially dry

Preheat oven 210 celsius.

Cut onion garlic fry in pan with oil and chilli flakes (optional)- Sautee until clear add chickpea’s cook until chick pea’s until soft and spices-
or
add chickpeas, oil and spices to a roasting tray cook turn in 15 minutes add onion and garlic
Cook until the chickpeas are soft and golden brown.
